Kare-kare is a traditional Filipino ox tail stew in a peanut-based sauce. Because the recipe varies from family to family and person to person, what follows is a version of how this dish is made in my family.
Pansit Bihon is the type with which foreigners usually associate the word "pancĂt": very thin rice noodles fried with soy sauce and some citrus (kalamansi) and possibly with patis (fish sauce), and some variation of sliced meat and chopped vegetables.
